Focaccia

  • 4 cups all-purpose flour
  • 1 ½ tsp instant yeast
  • 1 ½ tsp kosher salt
  • 1 ¾ cups water (lukewarm)
  • ¼ cup olive oil, more for the pan

  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 10 ounces brie, cut into cubes
  • 1 ½ cups fresh cranberries
  • 1 tbsp fresh rosemary

Step #1: Dough Preparation

Mix the ingredients for the focaccia in a medium-sized bowl. As it’s a no-knead dough, you don’t have to knead it. However, kneading just a few times to ensure all ingredients are mixed thoroughly is a good idea. Let it sit for at least an hour at room temperature. You can use it immediately or put it in the fridge overnight.

Film a baking sheet on a pan and spread 1 tablespoon of olive oil evenly over the sheet. Spread the dough, patting it out until it fills the pan. Let it rest uncovered for half an hour.
