½ cup sake ½ cup mirin ½ cup reduced-sodium soy sauce 1 tbsp. Sugar ½ tbsp. Grated fresh ginger 1 lb. pork loin, trimmed ½ small pineapple (peeled and cored) 1 small red onion, halved 8 oz. mixed-color baby peppers cut into 1-inch pieces 2 tbsp. Olive oil Kosher salt and pepper Sliced Jalapeno for serving
Making the Pork, Pineapple, and Onions Skewers
Maybe the ingredients look like they’re a bit too many. They’re not – they’re the perfect number to hit all the right flavor notes. And putting everything together couldn’t be easier – it’s all finished in just a few simple steps!
You want to combine your sake, mirin, soy sauce, sugar, and ginger in a saucepan and stir occasionally until the sugar has dissolved. Simmer a while longer until the sauce becomes thick enough to stick to the back of the spoon.
Meanwhile, cut your onions, pork, baby peppers, and pineapple into small wedges and toss around a bowl with olive oil, salt, and pepper until well-coated.
Then, turn on your grill to medium, and arrange your pork, pineapple, and vegetables on skewers cooking thoroughly and use the last five minutes to baste generously in the sauce. Cut up some jalapenos, and you’re finished!
